Homemade tea cakes for Mum this Mother’s Day

Take your pick between our delicious tea cake recipes including our Green Tea Pistachio Tea Cake or the Orange Marmalade Tea Cake. These recipes make 9 small cakes.

Green Tea Pistachio Tea Cake

Makes 9 small cakes

Cake Ingredients
100g Butter (softened)
75g Cream Cheese (softened)
175g Caster Sugar
Pinch Salt
2 eggs
150g self raising flour
100mL milk
25g Green Tea Matcha Powder
3 drops Natural green coloring

Cake Method

  1. Preheat oven to 160 degrees C.
  2. For this tea cake, we have used a silicon mini loaf tray, however the recipe works well if cooked in cupcake or muffin tins as well. If using a cupcake or muffin tin, line the holes with patty cases. If using a silicon mini loaf tray, spray well with canola oil.
  3. Place softened butter and cream cheese into a mixing bowl.
  4. Using a hand mixer, whisk on medium to high speed until combined (approx. 2 min)
  5. Add the caster sugar and salt. Continue to whisk on high for another minute.
  6. Add the eggs into the mixing bowl one at a time, whisking each egg in on low speed until they are all combined.
  7. Add the flour, milk, matcha powder & green colouring into the mixing bowl and whisk on low speed until combined (approx. 2 minutes). Do not over mix.
  8. Fill the mini loaf tray or patty cases with the prepared mix.
  9. Place in the oven and bake for 15-20 minutes or until a skewer can be inserted and comes out clean.
  10. Once cooked, remove from the oven and cool down for approx. 40 minutes. Remove from the tins and place on a cool tray or plate to ice. Note that cakes need to be cool to touch before icing.

Matcha Icing Ingredients
1 tub Philadelphia Classic Icing (230g)
1 tbsp Green Tea Matcha Powder
90g Chopped Pistachio

Matcha Icing Method

  1. Place the Philadelphia classic icing and green tea matcha powder into a bowl. Using a hand mixer, whisk on medium speed until combined and fluffy (approx. 1 minute)
  2. Using a butter knife, spread the icing on top of the cool cake
  3. Roughly chop the pistachios and sprinkle on top of the cakes
  4. Serve and enjoy!
Orange Marmalade Tea Cake

Makes 9 small cakes

Cake Ingredients

90g White Chocolate
