Anzac Day brekky with Jamaica Blue

Anzac Day 2020 will be a little different in light of the current restrictions in place due to COVID-19. To commemorate Anzac Day this Saturday 25 April, you can watch the live stream of the dawn service on TV or online – or best yet, host your own service at home. RSL clubs around the country are asking Australians to stand for a minute’s silences at the end of their driveways, on balconies or verandas at 6am and hold a candle to fallen heroes.

After the dawn service has finished, what better way to commemorate the Aussie spirit than to enjoy some time with family over breakfast. We want to share our Green Island Fritters recipe, one of our top breakfast options, so you can cook it up and share with your loved ones.

Green Island Fritters with avocado smash

Vegetarian
Serves: 6

Ingredients

Corn Fritters
250 g ricotta
2 eggs
125 ml (½ cup) milk
400 g tinned corn, drained
½ cup finely diced red capsicum
¼ cup finely diced red onion
2 tablespoons finely chopped chives
110 g (¾ cup) self-raising flour
1 teaspoon salt
Olive oil, for cooking 

Avocado smash
2 ripe avocados, cut into 1 cm cubes
½ red onion, very finely chopped
1 tomato, halved crossways, seeded and finely chopped
¼ bunch coriander, rinsed well and finely chopped
2 teaspoons ground cumin
1 tablespoon sweet chili sauce
1 tablespoon lemon juice
1 teaspoon salt

Method
  1. To make the avocado smash, place all the ingredients in a bowl and stir to combine. Set aside until needed.
  2. Place the ricotta, eggs and milk in a bowl and whisk until smooth. Stir in the drained corn, capsicum, red onion and chives. Add the flour and salt and gently mix until combined.
  3. Heat the oil in a large non-stick frying pan over medium-low heat. Working in batches, cook ¼ cups of mixture for 3 minutes on each side or until golden. Place on a baking tray lined with paper towel and keep warm while you cook the remaining fritters.
  4. To serve, divide the fritters between 6 plates. Top with avocado smash and serve immediately. Add a side of bacon if you like!
