Celebrate International Burger Day, Jamaican style

International Burger Day is almost here and we couldn’t let this day pass us this year without a little celebration…Jamaican style of course! Ahead of the official day, the 28th May, we’re sharing the recipe for our famous Jerk Chicken Burger so that you can enjoy this mouth watering deliciousness in the comfort of your own home.

JERK CHICKEN BURGER

Makes 6 portions

Jerk Chicken Ingredients
6 x  120g chicken thigh fillet
500ml chicken stock
2 tbsp Jerk spice mix
¼ cup olive oil

All other Ingredients
6 x brioche buns
6 x pineapple rings (tinned pineapple)
3 cups washed rocket (½ cup per burger)
12 slices fresh tomato (2 slices per burger)
12 x gherkin slices (2 slices per burger)
6 tbsp Jerk BBQ Sauce
6 tbsp Paprika Aoili (1 tbsp per burger)

Method

  1. Preheat oven to 180C
  2. Trim thigh fillets of excess fat or cartilage, then place thigh fillets in a baking tray
  3. Heat stock in the microwave for 4 minutes or until hot
  4. Pour hot stock over thigh fillets and then cover tray with foil. Bake in the oven for 25 minutes
  5. Test chicken with probe thermometer for core reading of 75C. Remove from the oven if temperature has been reached, or keep cooking if not yet 75C. When cooked, remove thigh fillets from stock and cool for 10 minutes
  6. In a bowl, mix together the olive oil and Jerk spice mix. Add the thigh fillets, then mix the chicken & spice thoroughly to coat.
  7. Place the chicken thighs & pineapple slices on a hot grill. After approx 2 minutes flip the chicken and pineapple & continue to grill on the other side for a further 2 mins
  8. Now to assemble the burgers. Slice brioche buns in half & toast cut side on the grill. Toast until golden
  9. Spread 1 tbsp of paprika aioli on the bottom of each brioche bun and then add rocket
  10. Top with tomato slices, then sliced gherkin
  11. Add the hot jerk chicken then top with the grilled pineapple
  12. Place 1 tbsp of jerk BBQ sauce on the top side of the bun and place on top of pineapple
  13. To serve, use a skewer to keep the burger together
